Nilma is the world’s only company to offer the online management of all its cooking and chilling appliances, from braising pans to pasta cookers, from combi ovens to automatic pans, and from continuous fryers to chillers. With the aid of the CCMP software platform, Nilma can control everything even from a smartphone, including not only the appliance operation but recipes and HACCP parameters as well.

Nilma has been supplying products and services to many customers in the catering and food industry sectors since 1956, solving problems and responding to needs with innovative and customised solutions. Over time, it has got to grips with the construction and regulatory standards adopted in the kitchens of cruise ships. Kitchens which produce thousands of meals in tight spaces. It has offered leading-edge solutions for airport kitchens that process tens of tons of food every day. And designed layouts for canteens and hospital kitchens to produce personalised meals on trays. And to top all this, Nilma has always found solutions to the many demands from the food industry for the realization of new products from vegetables, meat, pasta, rice and other cereals.

Created for restaurants, hotels and small institutions, but also ideal for greengrocers and delicatessens, they feature an exclusive, patented washing system that reduces the bacterial load of fresh vegetables by more than 90%.

Both appliances use the exclusive, effective, adjustable whirlpool washing system (which can be set to be gentle with lettuce, intensive on carrots). The vegetables are rotated immersed in water for easy removal of all dirt, which passes through the holes in the sides and bottom of the drum to the drain.

The Atir Air Plus fruit and vegetable washer is designed for kitchens and fourth-range vegetable processing centers needing to wash lightweight products that tend to float on water, such as mushrooms and strawberries.

The exclusive combination of the water whirlpool washing system with the thrust generated by the air bubbles ensures that lightweight vegetables are effectively immersed and rotated in water.

The adjustable rotational motion of water detaches all dirt from vegetables and eliminates it through the drain. The average wash duration is just three minutes. On completion, the basket is automatically tilted to discharge vegetables into the collection trolley.

Idromatic is the continuous vegetable spin dryer designed to dry large quantities of vegetables (400 to 1,000 kg/h) in a fully automatic cycle and without wasting a single leaf of even the most delicate products, delivering savings on labour and condiments as well as ensuring a longer shelf life.

  • Idromatic spin dryer is designed to withstand continuous heavy-duty operation, as required by industrial food production and Fourth-range processing plants.

AUTOMATIC PEELERS

Pioneer is the quick peeler that peels potatoes, carrots and other root vegetables in just 2 minutes, with minimal waste.
The abrasive-coated and specially shaped peeling disc and baffles distribute the peeling action evenly across the whole surface of potatoes, reducing the processing waste.

Pioneer is produced in two models (K15 and K30) with a loading capacity of 15 and 30 kg

 KSP 40 retains all the plus factors of the existing range, including extreme operating versatility, reduced need for condiments, higher product yield, high production capacity, and easy and safe food handling.

KSP 40 also ensure the uniform cooking across all containers, regardless of the cooking mode selected – convection, steam or combined.

KSP 40 is complete with a touch screen PLC control panel allowing the automatic recipe management. 

Konvectio Steam combines two innovative cooking systems: convection and steam. This combination allows the cooking by convection or steam only, but also the use of both the two modes simultaneously, or their execution in sequence, enabling the perfect cooking of any product in a single oven.
